BECAUSE... WISCONSIN
Kringle Bells
Holidays are all about the sweets - you're really gonna hit the gym hard in the new year, so you might as well jam your cram hole full of sugary sweets during the holidays! Most states' (including Wisconsin) top pick for holiday dessert is cheesecake, which is totally understandable; it's a safe, consistent choice that pretty much everyone enjoys. However, plenty of Wisconsinites also love a big ol' kringle. This luscious loop of gratifying goodness has been a local tradition since Danish immigrants brought it to Wisconsin in the mid-19th century. The 32 buttery, flaky layers are so dang tasty, it takes a LOT of restraint to keep from eating your way through the entire circumference!

Single and ready to kringle...

The best Christmas cookies in town
There are so many recipes that we love - both our own, and those of our idols - that we figured we should start sharing some of them with you, our dear readers! Up this week - our awesome Pastry Chef's Peppermint Shortbread Cookies!
360g soft butter180g sugar6g kosher salt520g AP flour6g vanilla pasteChocolate of your likingPeppermint candy canes- Cream butter and sugar until soft and fluffy, then mix in the vanilla paste. Add all dry ingredients and mix until combined.- Roll out and cut into squares or any shape you want!- Preheat oven to 350°- Bake on a tray leaving about 1/2” between cookies for approximately 10 minutes.- While these are baking break up your candy canes so they are small pieces, not dust but not too large to chew.- Once cookies are out of the oven and cooling, melt your chocolate.- Dip half of your cooled cookie into the chocolate and place it back on the tray. Proceed to sprinkle your candy cane bits onto the chocolate.- Once all the cookies are dipped and candy-caned, place in refrigerator for about 10 minutes just to let the chocolate harden!

Just make sure you buy the right kind of candy canes! 🤢
BEHIND THE SCENES
What the hell is in a fruitcake anyway?
As anyone with a grandma knows, fruitcake is a very... distinct holiday dessert. Those things are hard as a rock, and they last forever (like, seriously forever). As Johnny Carson once said, "There is only one fruitcake in the entire world, and people keep sending it to each other". The main reason they're so indestructable: they're made up of 70% dried fruit and nuts. The sugary batter is really just there to hold everything together. Douse that bad boy in some booze, and you have yourself a fruitcake! Fruitcakes (or similar items) have actually been around since the Romans. The candied fruit used to make them was a status symbol in the Middle Ages, so they used to be all the rage. Unfortunately, that was literally hundreds of years ago, so you can go ahead and toss yours.
