A basket of golden, greasy, crispy curds is in front of you. You go to take a bite and “squeak” goes the cheese curd. What in the world was that noise? That, my friends, is freshness. That’s right, your cheese curd isn’t fresh if your cheese curd doesn’t squeak. But why does a cheese curd squeak? It's the network of protein within the curd against the enamel of our teeth! No need to panic if your cheese curd doesn’t squeak, it just means you have aged cheddar, and we all know that's delicious too!

If you're like me, you probably envision a flour-covered pizzaiolo tossing (or kneading) your dough and carefully applying just the right amount of toppings. But robots?!? That could soon be a reality, as a slew of companies are bringing this sci-fi concept to market. Personally, we prefer the human touch - what do you think?

Well, we might as well keep talking about cheese! Ten years ago, Clock Shadow Creamery opened their cheese factory in Milwaukee’s Walker’s Point neighborhood. Among other sources, they use milk from the Milwaukee County Zoo and work with local farmers to create special farmstead cheeses. Visitors to the zoo can see the cows, and then visit the factory to see how they convert the milk to a wide range of cheese varieties. Their Quark, Chèvre, and Ricotta have won awards at the Wisconsin State Fair and in national competitions.
