THIRD COAST x CENTGRAF

We’re celebrating the harvest season with a special dinner this coming Thursday at Third Coast Provisions, and it’s all inspired by the bounty of Centgraf Farms! Centgraf is a family-owned farm in Wisconsin that is known for its commitment to sustainable and humane agricultural practices. The farm produces a wide variety of vegetables, fruits, meats, and cheeses, all of which will be used to create the delicious and unique menu for this special dinner. The evening will begin with an amuse of “Deviled” Honeynut Squash Pavlova, a sweet and savory bite that showcases the versatility of this winter squash. The first course is a Heirloom Tomato Seafood Bouillabaisse, a classic French dish made with fresh seafood, tomatoes, and herbs. The bouillabaisse will be paired with a tomato rouille, a garlicky mayonnaise that adds depth and flavor to the dish. The second course is Chicken Fried Quail, a southern delicacy that is perfectly paired with the sweet and tangy Tropea Onion Caramel-Apple Jam and the sharp Roelli Red Rock Cheddar. The third course is Lake Superior Walleye Escabeche, a Spanish dish of fish that is marinated in vinegar and olive oil. The walleye will be served with preserved heirloom carrots, carrot jus, and carrot top salsa verde, a bright and flavorful condiment. The fourth course is Duck Confit, a French dish of duck that is slowly cooked in its own fat. The duck will be served with choucroute garnie, a traditional Alsatian sauerkraut dish, blueberry aigre-doux, a sweet and sour sauce, duck cracklins, and a Walla Walla onion haystack. For dessert, guests will enjoy a Walnut Financier and a Sorbet crafted with fresh plums from Centgraf, accented by traditional fall flavors.
