It's September in arguably the most German state in the country, and that means Oktoberfest! We'll dive all the way into that beer-based jamboree next week, but in the meantime, let's dip a toe. We obviously LOVE our suds here, and we'll incorporate it into just about anything, as anyone who's tried the State Fair's deep-fried beer can attest. As a pizza joint in Wisconsin, we feel that it's our responsibility, nay, our DUTY to put more beer on the menu. We love getting your feedback - let us know what you think below!

What The Fudge?

As Wisconsinites, I think we all can agree that we look for and love any way to consume cheese... at least most of us. For those chocolate and cheese lovers out there, we've found something just for you. Cheese Fudge. That's right, such a thing exists. Search Google and you can find plenty of recipes for this treat, even some with nuts or Velveeta. Wisconsin Cheese went even further to give us a recipe for Chocolate Cheese Fudge S'mores Bars. Not too shabby!

The Bear - Too Much Bite?

We were listening to one of our favorite podcasts when they started to cover something we've been seeing a lot of: reaction to FX's surprising hit show, The Bear. A lot of non-service industry folks have asked us how accurate the show's portrayal of the service industry really is. The truth? Some hits and some misses. The toxic energy of the show might still exist in certain kitchens, but for the most part, it's the product of a bygone era. It's definitely still a pressure-filled environment, but you'd be hard-pressed to find coworkers screaming at one another in most modern kitchens. The Bear also gets a lot of the little things right. Fernet Branca courses through the veins of many a restaurant employee, as does the Pepto Bismol that alleviates the attendant heartburn. Using "Behind" and "Corner" to communicate your location is so ubiquitous that we often find ourselves using the terms when navigating the produce aisle at a grocery store. The fact that characters drink out of quart containers shows that the creators really did their research. The sound of a ticket printer going off is triggering to just about anyone who's worked a busy service.More than anything, The Bear captures the contradiction at the heart of restaurant work - the juxtaposition of discipline and routine and the fact that anything could go wrong at any time (and often does).
